Extremely easy frozen key lime pie

Although winter is coming and a frozen key lime pie just sounds more like a summer item......my friend AS requested the recipe from me recently......so i figured i will just share it.

The recipe is from the book 100 Best Dessert Recipes....it is actually one of those books that are on the sales rack all the time.... but it actually have some really good recipes

Enjoy this....it is really delicious and extremely easy to make!

Materials
  • Graham Cracker Crumb Crust
  • 4 limes
  • 1 can (14oz) sweetened condensed milk
  • 1 cup heavy or whipping cream
Methods
  1. Prepare typical graham cracker crust (crush graham cracker + butter)
  2. Grate 1 tbsp of lime peel and squeeze 1/2 cup juice
  3. In a large bowl, stir condensed milk and lime peel and juice together
  4. In medium bowl, beat cream until stiff peaks (medium speed)
  5. Fold whipped cream, 1/3 at a time into lime mixture until just blended
  6. Pour mixture into crust
  7. Cover and freeze at least 3 hours
  8. Let pie stand 10 mins at room temp before serve

Thanks to Asian Clams...I am on the internet

I know I am already on the internet with this blog.....but this is different.......I am on the internet because of a NPR radio show!!! That is what is exciting :)

Plus it is semi-related to my work which makes it even more exciting :)

Corbicula fluminea is the newest non-native species in Lake Tahoe. We are doing a lot of work to try to find out more about them. Here is a recent report about them if anyone is interested...Link

7 layers cookie bar aka Heart attack bar




I discovered this little yummy treat in Kensington Market........@ a place called Cora's kitchen

I also have a soft spot for chocolate (well i guess who doesn't) and coconut ..............and this bar has it all......................actually alot alot more!!!


The best way to enjoy this bar is to not look at the ingredients and how much calories are involved

JUST EAT and ENJOY!!!

1 stick butter

1 1/2C graham cracker crumbs

1 pkg chocolate chips (I used semi-sweet or bitter sweet, just cause all the other ingredients are sweet enough!!!)

1 pkg butterscotch chips

1 1/3C shredded coconut (unsweeten)

1 can condensed milk

1 C chopped pecans

1) Mix melted butter and graham cracker crumbs and then spread it out at the bottom of a 9 x 13 " pan

2) Sprinkle chocolate chips, butterscotch chips, shredded coconut layer by layer

3) Drizzle condensed milk on top of that

4) Sprinkle chopped pecans on top

5) Bake for 25-30 mins @ 350F

6) Let cool before serving!!!


Make sure you go to the gym for 10 hours after you have a piece of this!!! I am telling you it might be hard work later but it is well worth it!!!
